GRENACHE 75% – SYRAH 25%
The harvest took place September the 9th, 11th and 18th 2021.
The grapes are destemmed and crushed in a stainless-steel tank. The temperature is maintained at around 25 ° C during the alcoholic fermentation. The duration of the maceration is 30 days during which pump over are made following the tastings of our oenologist Philippe CAMBIE.
43% in used barrels for 11 months.
The first nose developed powerful aromas of black fruit, with a slight hint of smoke and spice characteristic of Syrah.
On the palate, the tannic structure is dense and retains freshness and elegance, underlined by the discreet aging.
This wine goes perfectly with a leg of wild boar with mushrooms and chestnuts, a mustard cake or a lamb cake with eggplant.
